Former egg farm workers say USDA ignored complaints | Nation | News from Fort Worth, Dal...

DES MOINES, Iowa -- U.S. Agriculture Department employees worked full-time at two Iowa egg farms at the center of a salmonella outbreak, but two former workers said they ignored complaints about conditions at one site.

The USDA employees worked next to areas where roughly 7.7 million caged hens laid eggs at the two operations, but agency spokesman Caleb Weaver said that their main duties are "grading" the eggs and that they aren't primarily responsible for looking for health problems.

In response to the outbreak that has led to a recall of about 550 million eggs, the U.S. Food and Drug Administration examined the Wright County Egg and Hillandale farms and noted in a report this week that inspectors found rodents, wild birds, seeping manure and maggots in the operations there.

Weaver said the USDA employee who oversaw grading at the facility did not recall anyone raising issues.

Two former workers at Wright County Egg facilities, Robert and Deanna Arnold, said they reported problems such as leaking manure and dead chickens to USDA employees, but nothing was done.

The USDA "graders" worked in buildings next to where hens laid eggs, focusing on weighing, measuring and inspecting eggs before they were packaged. They are the people who determine whether an egg is A or AA, for instance.

"It didn't matter which USDA officer was working -- if we reported something they would just turn their heads," Deanna Arnold said. "They didn't care."

She recalled that when she advised one USDA employee of a problem, she was told to ignore it.

"She just said 'Go back to doing your job,' and that there was nothing they

We Americans do love our dietary supplements. More than half of the adult population have taken them to stay healthy, lose weight, gain an edge in sports or in the bedroom, and avoid using prescription drugs. In 2009, we spent $26.7 billion on them, according to the Nutrition Business Journal, a trade publication.

What consumers might not realize, though, is that supplement manufacturers routinely, and legally, sell their products without first having to demonstrate that they are safe and effective. The Food and Drug Administration has not made full use of even the meager authority granted it by the industry--friendly 1994 Dietary Supplement Health and Education Act (DSHEA).

As a result, the supplement marketplace is not as safe as it should be.

• We have identified a dozen supplement ingredients that we think consumers should avoid because of health risks, including cardiovascular, liver, and kidney problems. We found products with those ingredients readily available in stores and online.

• Because of inadequate quality control and inspection, supplements contaminated with heavy metals, pesticides, or prescription drugs have been sold to unsuspecting consumers. And FDA rules covering manufacturing quality don’t apply to the companies that supply herbs, vitamins, and other raw ingredients.

• China, which has repeatedly been caught exporting contaminated products, is a major supplier of raw supplement ingredients. The FDA has yet to inspect a single factory there.

The lack of oversight leaves consumers like John Coolidge, 55, of Signal Mountain, Tenn., vulnerable. He started taking a supplement called Total Body Formula to improve his general health. But instead, he says, beginning in February 2008, he experienced one symptom after another: diarrhea, joint pain, hair loss, lung problems, and fingernails and toenails that fell off. “It just tore me up,” he said.

Eventually, hundreds of other reports of adverse reactions to the product came to the attention of the FDA, which inspected the manufacturer’s facilities and tested the contents of the products. Most of the samples contained more than 200 times the labeled amount of selenium and up to 17 times the recommended intake of chromium, according to the FDA.

In March 2008 the distributor voluntarily recalled the products involved. Coolidge is suing multiple companies for compensatory damages; they have denied the claims in court papers. His nails and hair have grown back, but he said he still suffers from serious breathing problems.

The Dirty Dozen
Working with experts from the Natural Medicines Comprehensive Database, an independent research group, we identified a group of ingredients (out of nearly 1,100 in the database) linked to serious adverse events by clinical research or case reports. To come up with our dozen finalists, we also considered factors such as whether the ingredients were effective for their purported uses and how readily available they were to consumers. We then shopped for them online and in stores near our Yonkers, N.Y., headquarters and easily found all of them for sale in June 2010.

The dozen are aconite, bitter orange, chaparral, colloidal silver, coltsfoot, comfrey, country mallow, germanium, greater celandine, kava, lobelia, and yohimbe. The FDA has warned about at least eight of them, some as long ago as 1993.

Why are they still for sale? Two national retailers we contacted about specific supplements said they carried them because the FDA has not banned them. The agency has “the authority to immediately remove them from the market, and we would follow the FDA recommendation,” said a spokeswoman for the Vitamin Shoppe chain.

Most of the products we bought had warning labels, but not all did. A bottle of silver we purchased was labeled “perfectly safe,” with an asterisked note that said the FDA had not evaluated the claim. In fact, the FDA issued a consumer advisory about silver (including colloidal silver) in 2009, with good reason: Sold for its supposed immune system “support,” it can permanently turn skin bluish-gray.

Janis Dowd, 56, of Bartlesville, Okla., says she started taking colloidal silver in 2000 after reading online that it would keep her Lyme disease from returning. She says her skin changed color so gradually that she didn’t notice, but others did. “They kept saying, ‘You look a little blue.’”

Laser treatments have erased almost all the discoloration from Dowd’s face and neck, but she said it’s not feasible to treat the rest of her body.

Under the DSHEA, it is difficult for the FDA to put together strong enough evidence to order products off the market. To date, it has banned only one ingredient, ephedrine alkaloids. That effort dragged on for a decade, during which ephedra weight-loss products were implicated in thousands of adverse events, including deaths. Instead of attempting any more outright bans, the agency issued warnings, detained imported products, and asked companies to recall products it considered unsafe.

It has been three weeks and two days since the majority of Americans vowed to follow through with their New Year's resolution and lose weight. Because over half of the American population is over-weight, this is a valid goal.
When exercise and diet do not produce results, many people turn to diet supplements. Before anyone commits to a particular supplement it is best to educate yourself about the possible outcomes.
The General Nutrition Center's best-selling diet supplement is Xenadrine RFA-1. Elizabeth Refner, general manager of a GNC in North Houston, said Xenadrine aids dieters by suppressing appetite.
"Xenadrine contains caffeine and Excedrin, which decreases appetite," Refner said.
According to an advertisement in "Max Sports and Fitness" magazine, Xenadrine increases weight loss 38.6 times more than diet and exercise alone.
Although Xenadrine has not been evaluated by the Food and Drug Administration, clinical studies conducted at Eastern Michigan University states that compared to the placebo group, the Xenadrine group experienced 759 percent more weight loss without reducing their food intake.
As convincing as ads can be, one question remains—do diet supplements really work?
Former Personal Trainer, Neil Maddox said he lost 30 pounds in two months on Xenadrine.
"Through my training I saw results in just a month with and without working out," he said.
Although several products claim to be clinically tested, you have to find the product that works best for you, said Maddox.
"If a person is going to exercise, the results obviously come faster. I would recommend running or some kind of cardio-exercise," he said.
As is the case with any drug, diet supplements can cause side effects. Because some supplements contain caffeine, Maddox suggest avoiding soft drinks and drinking a lot of water.
Nervousness, increased heart rate, and mood swings are a few of the possible side effects, said Refner.
It is best to take diet supplements before 3 p.m. to avoid sleeplessness. To prevent bad reactions to diet supplements, Refner tells her clients to take a multi-vitamin to fall back on.
"Taking more protein depletes the caffeine," said Refner.
If side effects do occur, Refner said you should stop taking them and switch to a natural energizer. Diet supplements are not for everyone.
"People with high blood pressure should not take Xenadrine," said Refner.

The 2010 Bodybuilding.com Fitness Expo

I had the privilege to attend the 2010 bodybuilding. com fitness expo this year at Quest Arena in Boise. Many of the world's leading athletes were there to sign autographs and share their knowledge of weight loss and training. Some of them were; Branch Warren: IFBB Pro Bodybuilder, Ava Cowan: IFBB Figure Pro, Shawne Merriman: All-Pro NFL Linebacker and many others from UFC to Fitness Supermodel.



The show was an amazing feat, and really showed that bodybuilding.com cares for its fans and supporters, since they are a local worldwide store right out of Boise. There was free shirts, supplements, and everything in between. Each person was given a bag in the start of the event and each person left with at least $100 worth of free stuff.



Not only was there free stuff, but many small shows throughout the day, martial arts demonstration, fit show, and many others. It was fun to travel through the aisles and see all the booths and fitness athletes. I left with a lot of appreciation for bodybuilding.com as well as the fit expo itself.

Hillman gets a present from Royals after firing

KANSAS CITY, Mo. – Trey Hillman’s going-away present was one final game. His previous 358 as manager of the Kansas City Royals were a collective failure, disastrous enough to warrant his firing less than a quarter of the way into his third season. And still, the franchise offered him a parting gift.






Hillman was axed Thursday morning, and there he was that afternoon, in his uniform, wearing his No. 88, treating it just like any other day, any other ballgame. It was nothing of the sort, of course. He was gone after the game, no matter its outcome. This was merely a chance for closure, a kind gesture for a company man who simply wasn’t good enough at his job.

Over the hill

Manager Trey Hillman’s two-plus seasons of ineptitude ended Thursday. A look at his run with the Royals:

And he won. Gone was the seven-game skid that, in part, got Hillman canned. In the books was the first victory for Zack Greinke(notes), the reigning American League Cy Young winner who somehow went into mid-May without a win. Done, in all likelihood, was the major league managerial career of Trey Hillman, on his terms, with the most bittersweet win of his life, a 6-4 triumph over Cleveland at Kauffman Stadium.



“I’m thankful for the opportunity to get to manage today,” Hillman said. “You don’t want to go out on a seven-game losing streak. That’s for sure.”



Losing defined Hillman’s tenure in Kansas City. He came from Japan, where he led the Nippon Ham Fighters to a Japan Series championship, had a bar named after him and was feted nationwide. Here, he was just another Royals manager who couldn’t make lemons into lemonade.





The Hillman years were a succession of nadirs. Following a game in his first spring training, he chewed out his team on the field – a no-no that lost him respect in the clubhouse which he never gained back. Hillman’s managerial philosophy vacillated almost daily, and he was sensitive to the second-guessing that accompanied his inconsistencies. Tactical geniuses can thrive without bedside manner. On-field flakes survive as long as they unite their 25 players. Managers without either characteristic always fail.





“It wasn’t surprising – at all,” Hillman said. “It really wasn’t surprising. … It’s kind of like a sixth sense. You can feel it. You can feel it coming.”



The reality punched Royals general manager Dayton Moore repeatedly over the weekend against the Texas Rangers. First, Royals shortstop Yuniesky Betancourt(notes) dropped a popup – and Hillman fined him for it, setting quite the ugly precedent: Bad play equals no pay. Then he left Gil Meche(notes), the Royals’ iffy-armed starter, in for 128 pitches with the team trailing 3-2. The most egregious mistake came in the series’ third game: Rangers outfielder Josh Hamilton(notes) somehow ended up on second base despite failing to tag up on a flyout. None of the nine players on the field, nor the two dozen more Royals personnel in the dugout, noticed he hadn’t tagged.





Though Hillman blamed first baseman Billy Butler(notes), the ineptitude traced its way back to the manager’s office and all the way to Arkansas, where owner David Glass lives. Glass spoke with Moore. The words resonated. Moore, who as recently as Monday backed Hillman, whacked his hand-picked manager.





“There comes a point in time where you need to make changes,” Moore said. “And we’ve got to make changes what’s best for our organization long-term.”





Tears pooled in Moore’s eyes Thursday. He paused for 15 seconds to gather himself. This hurt. Not only was Hillman’s failure his, too, Moore regarded him as a friend and kindred spirit. They spent more time together than with their families. Sports breeds workaholism, and Moore and Hillman never quit on the Royals, never quit on each other. They simply never got it right.





“Sometimes things work in this business,” Hillman said, “and sometimes they don’t.”





They didn’t, though it did not prevent Moore from trying to give Hillman a final chance at doing what he so loves. Even if he wasn’t a good major league manager, Hillman relished the challenge. Thirty people get to manage a big league ballclub at any given time. Baseball men spend decades trying to get one shot, and to see it wither away – to not just understand its finiteness but know the exact point at which it would end – could have destroyed Hillman.





Instead, when Moore spoke with him Thursday morning and offered him the chance to wear his uniform one more time, “I didn’t hesitate,” Hillman said. “I can tell you that. I knew how many games in a row we’d lost. I know how hungry this community is, and ownership, and everybody to see us win. Sometimes difficult decisions have to be made. That might’ve been one of them. I don’t know if it was a difficult decision for him to come in and say, ‘Here’s an option.’ I just wanted to appreciate it.”





He swallowed hard.





“I’m glad we won.”





Hillman didn’t celebrate the victory any differently, nor did his players. This was no win-one-for-the-Gipper situation. The Royals didn’t know Hillman had been fired. Neither did his coaching staff. Secrecy was part of the pact. Only after Hillman called a postgame meeting – a rarity following a victory – did the players sense something was awry.





He gathered them in a room and spoke, for three minutes, with the team he guided to a 12-23 record. Hillman said he had been fired and that he appreciated managing them. He said: “You’ve got 127 games. Get it right.” And then he retreated to a news conference.





Inside the clubhouse, the Royals sat stunned. “It was grim,” outfielder Mitch Maier(notes) said. Players didn’t shower. They just watched the in-house TV feed and saw Hillman talk for 32 minutes, thanking people and discussing his deficiencies and replaying what must now seem like an odd scene: sitting in his office earlier this season and talking strategy with Ned Yost, the Royals special assistant who will take over as manager for the rest of the year.





There was regret in his voice, and disappointment, too, but no bitterness. Hillman managed in the major leagues, and he could always say he won his final game.





“It’s on your mind,” he said. “You don’t have a guarantee you’re going to be in a dugout again, much less a major league dugout. I was very appreciative of the fact of getting to be in the dugout. But I kept having to remind myself, ‘Stop thinking about what you’ve got to cover after the game. You’ve got a game to manage.’ It was pretty challenging.





“But the goal was achieved.”



After he wrapped up his final words in a Royals uniform, in his No. 88, he left the room with his head held high. After two-plus years of losing, Trey Hillman, the only unemployed man to ever manage a baseball game, went out a winner.

A woman from northwest suburban Inverness was charged with felony theft after allegedly depositing more than $70,000 belonging to the plastic surgeon she worked into her own accounts, police said.
Grace Artinian, 51, of the 1900 block of W. Ashbury Lane, Inverness, was charged Thursday evening with one count of felony theft, according to Chicago police. She was arrested at 12:02 p.m. Thursday at Belmont Area headquarters, 2452 W. Belmont Ave.
The incident was apparently uncovered when an investigator from Harris Bank where she had several accounts called Dr. Irvin Wiesman and asked if he had endorsed a check in the amount of $10,400 to his employee, Artinian, according to the report.
When the doctor said no, an audit was performed that revealed that since 2008, eleven checks totaling $70,300 that were issued to Dr. Wiesman in payment for patient services were all allegedly deposited into Artinian’s accounts.
Each check was made payable to the order of Dr. Wiesman but were signed on the reverse side, “pay to the order of Grace Artinian,’’ and the doctor never gave her the authorization to deposit his money into her accounts, the report said.
The Wiesman Cosmetic Surgery & Wellness Institute’s Web site listed two locations: The Natural Beauty Med Spa, 712 N. Dearborn St. in Chicago and 1160 Park Ave. in Highland Park. A voice mail message left at the Chicago location was not immediately returned.

Food Safety in Illinois CHAMPAIGN URBANA PUBLIC HEALTH DISTRICT


Environmental Health regulates food safety for the Champaign-Urbana Public Health District (Champaign-Urbana), and for the Champaign County Public Health Department (Champaign County, outside of C-U).




Following the guidelines of the Illinois Food Service (or Retail Food Store) Sanitation Rules and Regulations (C-U or County), (link to sanitation rules and regs code books), the food-related duties of the Environmental Health Division include conducting inspections at all food service establishments, investigating complaints, providing educational training to food service workers, and issuing health permits. We also review and approve establishment plans (C-U or County) for newly constructed or remodeled food services. If necessary, we initiate legal proceedings for non-compliance of applicable rules and regulations.



Food Service Inspections

What do our inspectors look for during a food service inspection? How is an inspection conducted? "Contributing Factors" have been identified by the Centers for Disease Control & Prevention as the leading causes of foodborne illness in the United States. Our inspectors focus on contributing factors during their unannounced, routine operational inspections and cite violations of contributing factors per our code book. Ideally, each food service establishment will reduce its number of contributing factors to ZERO. Contributing factors include:



•Foods from unsafe sources (such as: home-prepared foods, foods from unlicensed processors),

•Inadequate cooking (for example: undercooked beef, poultry, eggs),

•Improper holding temperatures (such as: food not kept hot enough in buffet lines or inadequate refrigeration) and improper cooling,

•Contaminated equipment (for example: cutting boards, sinks and work areas used for raw animal foods and not cleaned before cutting other foods),

•Poor personal hygiene (such as: employees not washing or improperly washing their hands or touching their face while in the kitchen).

Plan Review - New / Remodeled / Change of Ownership

New or remodeled kitchens or other food preparation facilities, and those changing ownership, must undergo a plan review process prior to a health permit being issued. The purpose of a plan review is to verify that your facility's structure and equipment and their capacities are in compliance with sanitation codes. These codes were designed toward preventing foodborne illness and the meeting of consumer expectations for a safe and sanitary food service. Plans must be approved by this department before construction or remodeling can begin.



A plan review application (C-U form or County form) must be submitted. Along with the application, you will need to submit a plan review fee, one set of architectural plans that includes an enlarged kitchen layout, equipment brochures and a copy of your menu. Other plan review documents include plan requirements and specifications (C-U or County), a plan review booklet (C-U or County) and a plan review fee schedule (C-U or County).



Health Permits

Anytime food is offered to the public, regardless of whether or not there is a charge for the food, a health permit is required. There are three types of food service health permits: annual, seasonal (less than six-month) and temporary. In conjunction with a health permit, we also issue facility food handler's licenses (when applicable) on behalf of the cities of Champaign and Urbana. Restaurants / Food Services - Annual Permits

All restaurants, retail food stores and other types of food services who will be operating on a year-round basis must obtain a health permit. Annual permit application (C-U form or County form).



Seasonal Food Services

Perhaps you'd like to operate an ice cream booth or hot dog stand, but only during the summer months. A six-month seasonal health permit C-U form or County form is available. For seasonal food services, when direct handling and/or preparation of food is performed, permanent hand washing facilities must be provided. See example about a portable hand sink. Depending on the foods you are planning to serve, a commissary may be required. A commissary is a base of operation where food and supplies are kept, handled, prepared, packaged or stored as required. The commissary may also require a health permit. If you are not using your own commissary, you must submit a commissary agreement form.



Temporary Food Events

ALBUQUERQUE (KRQE) - The wrong equipment, improper training and no paper trail has made for a potentially disastrous situation that could have exposed up to 33 people to HIV and hepatitis.



University of New Mexico graduate students in the physician assistant program thought they were doing a community service when they offered free diabetes testing at the Indian Pueblo Cultural Center in Albuquerque on Saturday, April 24. In all, about 55 people had their blood sugar tested.



“The device used to prick the finger to get the blood sample for testing was meant for single patient use and not for multiple patients,” Dr. Bob Bailey, the associate dean for clinical affairs at the UNM School of Medicine, explained.



By using that lancet on the 50-plus patients, some may have been exposed to serious diseases like HIV, hepatitis B and hepatitis C if a fresh needle wasn’t used. As many as 33 people may have been pricked by a used needle.



“Despite direct faculty supervision, three mistakes were made. They used the wrong device, they were not properly trained on how to use the device, and no record of people tested was kept,” Bailey said.



Once the people are tested for the diseases doctors will know if anyone was infected.



“At this time people who would have been infected at the event or potentially exposed [to the diseases], we would not expect them to have a positive HIV or hepatitis C test,” Dr. Susan Kellie with the med school said.



UNM will cover the costs of the recommended tests for those diseases.



“We want to work with those individuals to make it right by them,” Bailey said.



The debacle has already changed the way public testing is done. Bailey said those lancets will never be used again, those being tested will now be required to sign consent forms, and their contact information will be collected.



The testing mistake took place on April 24. Hospital officials are encouraging those who think they were affected to come forward. Call 1-888-899-6092 to ask for more details.

Calorie Boosters


Add calorie-dense foods to dishes increase their caloric impact. Use the following suggestions to fortify foods and boost calories:



• Margarine or butter: Add to casseroles, hot cereals, vegetables, potatoes, noodles, soups, and puréed foods. Spread on bread, sandwiches, and muffins.



• Mayonnaise: Spread on bread and sandwiches and use as a garnish for appropriate puréed foods. Use in egg, chicken, tuna, and meat salads or their alternate ground or puréed foods.



• Peanut butter: Use as a snack on bread, pretzels, apples, and celery. Blend into cookies, brownies, and milk shakes. (Do not use peanut butter for mechanical soft diets or dysphagia diets. For puréed diets, use creamy peanut butter only if puréed into another recipe, such as puréed sandwiches, muffins, and cookies.)



• Sour cream: Use on mashed potatoes and noodles and as a dip.

Measure ingredients into an appropriate-sized pan and whisk together (use soup can to measure the half-and-half). Heat to boiling, stirring constantly. Maintain temperature at 135˚F or higher for holding and service.



Cool any leftovers to less than 41˚F within four hours for storage. Reheat leftovers to 165˚F for a minimum of 15 seconds prior to serving (hold at 135˚F or higher for service).



Nutrient Analysis: 3/4 cup (6 oz) portion = 217 calories, 5.3 g protein, 11.4 g carbohydrate, 17 g total fat, 44 mg cholesterol, 703 mg sodium, (dietary fiber depends on the type of soup but is negligible)

Ingredients:

3 1/3 cups mashed potato flakes

1 1/4 cups water

3 1/3 cups half-and-half cream

5 T margarine

1 1/2 tsp salt



Directions:

Heat water, half-and-half cream, margarine, and salt in a saucepan just to boiling. Do not overheat or cream will curdle. Remove from heat. Stir in mashed potato flakes until moistened. Let stand 30 seconds or until liquid is absorbed. Whip with spoon until fluffy. Add additional hot liquid if potatoes are too stiff. Serve with margarine or gravy to moisten. Hold at 135˚F or higher for service.



Cool any leftovers to less than 41˚F within 4 hours for storage. Reheat leftovers to 165˚F for a minimum of 15 seconds prior to serving (hold at 135˚F or higher for service).

White Bread vs. Wheat Bread

Simply switching from white to whole wheat bread can lower heart disease risk by 20 percent, according to research from the University of Washington reported in the April 2, 2003 issue of The Journal of the American Medical Association.

I know whole wheat bread and white bread are different, but how exactly?



There are two big differences: how they’re processed and how healthful they are. The flour

for both is made from wheat berries, which have three nutrient-rich parts: the bran (the outer layers), the germ (the innermost area) and the endosperm (the starchy part in between). Whole wheat is processed to include all three nutritious parts, but white flour uses only the endosperm. When put head-to-head with whole wheat bread, white is a nutritional lightweight. Whole wheat is much higher in fiber, vitamins B6 and E, magnesium, zinc, folic acid and chromium.



But of all these nutritional goodies, fiber is the star:



*In a 10-year Harvard study completed in 1994, men and women who ate high-fiber breads had fewer heart attacks and strokes than those whose tastes ran to bagels and baguettes.



*Simply switching from white to whole wheat bread can lower heart disease risk by 20 percent, according to research from the University of Washington reported in the April 2, 2003

issue of The Journal of the American Medical Association.



*Fiber has long been known to aid digestive health too.



*Fiber can help you lose or maintain weight because eating fiber-dense wheat bread helps you feel full.



But a lot of white bread is enriched. Doesn’t that take care of the nutrients lost during refining?



Nope. When flour is refined, it loses the most nutritious parts of the grain—the fiber, essential fatty acids, and most of the vitamins and minerals. In fact, about 30 nutrients are removed, but

by law only five must be added back (though others often are): iron, niacin, thiamin, riboflavin and folic acid. There’s so little fiber left after processing that you’d have to eat eight pieces of white bread to get the fiber in just one piece of whole wheat bread.



Other foods besides whole grains have fiber and nutrients. Can’t I just get what I need from them and still enjoy my dinner rolls?



Whole grains provide health benefits that other foods don’t. In a Harvard study of 75,000 nurses, those who ate at least three servings a day of whole grains cut their heart attack risk by 35 percent and were less likely to get into weight or bowel trouble. By contrast, those who ate more processed foods—such as white bread, white rice and sodas—were more than twice as likely to develop diabetes. “Science continues to support the key role of whole grains in reducing chronic illnesses,” says Len Marquart, professor of nutrition at the University of Minnesota and author of the first health claim for whole grains approved by the US Food and Drug Administration.



How can I tell if bread is really whole wheat?



Color used to be a clue, but no more. Although white bread is white because it’s been bleached, some dark bread has just had caramel coloring added to it. Look for “whole grain” or “whole wheat” as the first ingredient on the label. If any other ingredient is first, put the loaf back and keep looking.



Is bread a vegan food?



Not usually. Many of the breads sold in grocery stores contain non-vegan ingredients, including milk, eggs, honey, shortening or whey—not to mention sodium stearyl lactylate, glycerides, emulsifiers, natural flavorings, artificial flavorings and lactase, all of which may be derived from animals. Vegans often have better luck at bakeries but still need to ask if the bread pans are greased with animal fat. If you like to bake, you can make your own bread. But if that doesn’t interest you, try Rudi’s Organic, Nature’s Path or Brownberry’s—they all produce vegan breads available nationwide.

Should a Dietician, Dietary or Restaurant Manager report an unlicensed place of work?

I had the pleasure of almost working for a Nursing home in the past without its nursing home license. They said during an interview for a CDM they wanted one for patients who were tube feeders or ambulatory residents for their facility. During my interview I asked many questions and to my shock the administrator at the time said to me that they were in a rush to open and that they were still waiting on a license 2 months away. I was personally shocked at finding out my state over looked this- as I relented it to my CDM friend Laura. After an investigation online and by word of mouth, what I found was appalling: several nursing home health facilities in my state of Illinois had no licenses and even more worst, no RD or CDM.



All managers today need to be Certified Dietary Managers. Last year Government in Illinois was working on a statute in which Hospital and Nursing Homes can no longer contract out the companies like Morrison or many others. In the end, because of my integrity I called this company back and decline there offer for employment due to my own personal policy of not working for an unlicensed faculty.







Illinois Gov. Pat Quinn has formed a state Nursing Home Safety Task Force that he says will improve safety at nursing homes and for nursing home residents.



Quinn announced the task force and named his senior health policy advisor, Michael Gelder, to head the panel. Six state agencies and departments will participate in the task force. According to the governor's office, the task force will examine nursing policies and procedures in addition to other duties.



Quinn says the task force will make sure nursing homes are "a safe haven for residents, many of whom are among our most vulnerable and needy." He says this will be done "with all deliberate speed."







I was so proud and happy to hear this and hope other managers think and learn about what they would do in the same situation.

NEW YORK (Reuters Health) – Postmenopausal women may lessen their chances of fracturing a hip by adding soy-based foods to their diet, a study from Singapore hints.



Women in the study were 21 to 36 percent less likely to fracture a hip when they reported eating a moderate amount of soy, Dr. Woon-Puay Koh, at the National University of Singapore, and colleagues found.



In their study, daily moderate soy intake was at least 2.7 grams of soy protein, 5.8 milligrams of soy isoflavones per 1000 calories, or the equivalent of 49.4 grams of tofu.



This level of soy is consistently "higher than the low levels of consumption in the West," Koh told Reuters Health in an email.



Koh's team assessed dietary soy intake of more than 63,000 Chinese men and women who were 45 to 74 years old when, between 1993 and 1998, they enrolled in the Singapore Chinese Health Study.



Follow-up through the end of 2006 showed 276 men and 692 women had fractured a hip.



The men were about 71 years old and the women about 73 years old, on average, when they suffered the fracture, the investigators report in the American Journal of Epidemiology.



As mentioned, moderate soy intake was associated with a reduced risk of hip fracture among women, but not among men.



The current findings are consistent with those of a previous investigation in postmenopausal Chinese women in Shanghai who showed a 30 percent reduced risk for hip fracture among those consuming higher amounts of soy.



Koh and colleagues surmise that the bone-protective effects of soy isoflavones may play a critical role in the bone health of postmenopausal women.



They call for further investigations to confirm and clarify this association.
